Cherry Chocolate Pumpkin Banana Bread

- 2 medium bananas, mashed
- 1 cup canned pumpkin puree (not pumpkin pie filling)
- 1/2 cup chopped sweet cherries
- 1/2 cup semi-sweet chocolate chips
Instructions
- Preheat Oven: Preheat your oven to 350°F. Grease and flour a 9×5-inch loaf pan. (Sometimes I use sugar instead of flour.)
- Mix Dry Ingredients: In a medium bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking soda, baking powder, and salt.
- Combine Wet Ingredients: In a large bowl, whisk together the oil, sugars, eggs, and vanilla extract until smooth.
- Incorporate Banana & Pumpkin: Stir in the mashed bananas and pumpkin puree until combined.
- Blend Ingredients: Carefully mix the dry ingredients into the wet ingredients using a rubber spatula or wooden spoon. (If you mix it too much, the bread will be tough and chewy.) Then fold in the chopped cherries and chocolate chips.
- Bake: Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean and the top feels firm. The loaf should not wobble when the pan is nudged.
